Sticky Trail Mix

Everyone loves a good trail mix, but have you tried making it sticky? Trust me; it’s delicious! Not only does this sticky trail mix satisfy the taste buds (kids like it, too!), but it’s nutritious AND filling.

Best eaten with a spoon, this trail mix is not exactly great as a trail snack - UNLESS! you don’t mind licking your fingers clean afterwards. (Or just bring a bamboo spoon with you). My favorite way to enjoy this mix is on its own as my breakfast. A small serving of about 1/4 cup to 1/2 cup of it keeps me feeling full until lunchtime and beyond. Adding it to vanilla ice cream or oatmeal is also quite tasty!

RECIPE

Ingredients

  • 1-3/4 C dried nuts, seeds and fruit of your choice

  • 1/4 C raw, local honey

  • 1/2 Tbsp unrefined virgin coconut oil

1) Preheat the oven to 350*F.

2) Measure and mix the dried nuts, seeds, and fruit.

Measure out 1-3/4 cups of whatever nuts, seeds, and fruits you desire. The recipe displayed here used cashews, pecans, almonds, pumpkin seeds, chia seeds, white mulberries, and goji berries. Combine all 1-3/4 cups into a large bowl and mix them together.

3) Add the honey and coconut oil.

Pour 1/4 cup of honey and 1/2 tablespoon of coconut oil on top of the trail mix. Mix it together until all surfaces of the nuts, seeds, and fruit are covered by the honey/coconut oil.

4) Spread onto the baking sheet.

Place a piece of unbleached parchment paper onto a baking sheet. Spray a tiny amount of cooking spray (coconut oil spray is great for this recipe!) on the parchment paper. Spread the sticky trail mix onto the parchment paper and level it out as evenly as possible as shown above.

5) Bake it!

Put the baking sheet into the pre-heated oven and bake for about 10 minutes or until the honey/coconut oil begin to bubble. Be diligent to not allow it to bake for much longer after the first appearance of the bubbling! After baking, pull out the tray and set it aside to cool to room temperature.

Once it has cooled, you can move it to your desired storage container. It will form to whatever shape the container is. As the trail mix sits, it will harden a bit. There is no need to refrigerate.
